It’s topped with all the fixings, including caramelized red onion, vegan bacon, melty vegan cheese, and a smoky chipotle-lime mayonnaise. For the sauce
- 3 Tbsp.vegan mayonnaise
- 1big squeeze lime juice
- 1/4 tsp.chipotle chili powder
For the burger
- 2 Tbsp.extra-virgin olive oil, divided
- 1red onion, thinly sliced
- 1plant-based patty, preferably Impossible Burger
- 1vegan Hawaiian bun, toasted
- 1slice vegan cheese
- 2slices vegan bacon, cooked
- Lettuce
- Tomato
Directions

- Step 1Make sauce: In a small bowl, whisk ingredients until combined. Refrigerate until ready to use.
- Step 2Make burger: In a large skillet over medium heat, heat 1 tablespoon oil. Add onion and cook, stirring often, until starting to soften. Reduce heat to medium-low and continue to cook, stirring often, until deep golden and jam-like, 45 to 60 minutes. Transfer to a plate and wipe skillet clean.
- Step 3Add remaining 1 tablespoon oil to skillet and heat over medium-high. Cook patty 2 to 3 minutes per side, or until it reaches desired doneness.
- Step 4Slather bun with sauce. Add patty, cheese, and a big spoonful of caramelized onions. Let cheese melt. Add bacon, lettuce, and tomato. Top with bun.
